Curry recipe – Vegetable curry
I regularly prepare various colorful curries. This is my way to feed my baby with vegetables in various forms. I am lucky that my child is very herbivorous, so I do not have a big problem with it and the whole family really likes curry. If I cook only for adults, I also add ginger and hot peppers or just dried pepper flakes. Then it’s red and spicy. This time the curry had to be gentle because children also ate with us.
When I have little time, I choose express vegetable curry with potatoes and coconut milk. I do milk in the middle, it takes about 4 minutes. I put the chips into the blender, pour the water and turn it on. I leave it for about 4 minutes, I pour through the gauze and that’s it, the milk is ready.
The preparation of the express curry takes me as much time as basmati rice is cooked, which is about 15-18 minutes. Fast, tasty, colorful and effective. I like this type of meals the most. There will be a lot of curry recipes on this site. Smile and cook with us!
Curry recipe – Vegetable curry – ingredients of the recipe
- 2 sweet potatoes
- 500 g white potatoes
- 2 red peppers
- 2 onions
- 1 jar or can of chickpeas
- 2 carrots
- ½ cup of peas
- a few cabbage leaves (optional)
- 200 g of coconut shavings + 1.2 water or 2 cans of coconut milk + 1 can of water
- 1 tablespoon of a mild curry mixture
- a few tablespoons of oil
- served basmati rice
Curry recipe – Vegetable curry – preparation of the recipe
1. I start with rice. I pour water into a pot, slightly salt, put basmati rice and put it on gas.
2. Sprinkle the shavings with water in a blender and place for grinding for about 4-6 minutes. The blender works and I go to vegetables.
3. Peel onions, cut into tongues or slices and fry lightly in oil.
4. Peel the carrot and cut into slices, add to the onion, add curry and salt. I’m frying for a moment.
5. Peel sweet potatoes, cut into large cubes, as well as potatoes, add to onions and carrots.
6. Turn off the blender, pour the milk through a sieve with gauze and squeeze. Pour the whole into a pot with vegetables. I throw away chips from gauze or leave it on coconut flour.
7. Curry boil and screw the gas, it has to boil.
8. I clean the peppers from seeds. Leaves of kale, I clean and remove hard stems.
9. After 5 minutes, add the peppers, kale, chickpeas with the pickle and frozen peas to the pot. I cook about 3 minutes.
10. I serve curry with basmati rice 🙂
